Chocolate Chip Funfetti CAKIES

Amanda has a cookbook dedicated solely to cupcakes! Her mission is to bake her way through that book but was a little disappointed with one recipe particularly because she used a boxed cake mix.  I told her that boxed cake mixes are great.... to make CAKIES with!  Cakies are my version of the perfect marriage: cake and cookies :o)

Here's what you need:
  • 1 box Funfetti cake mix
  • 1/3 c. water
  • ¼ c. butter, softened
  • 1 egg
  • 1½ c. mini chocolate chips

1. Preheat oven to 350ยบ F.

2. Beat cake mix, water, butter, and egg at low speed until moistened.  Beat at medium speed for about one minute.  Dough will be stiff.

3. Mix in chocolate chips.

4. Drop dough by the teaspoonful, about two inches apart, onto greased cookie sheets.

5. Bake 10-12 minutes. Leave on cookie sheets for one minute before transferring to wire racks to cool completely.

Makes about four dozen.
Enjoy, Amanda!

As promised on Facebook (do you "like" me yet?), here is a little sneak peek of Jaden's birthday party...
